Celebrate National Oatmeal Cookie Day

National Oatmeal Cookie Day is April 30th!  (We promise it's a real thing!). Did you know, oatmeal cookies have been around since the 1800s? The cookies quickly became popular, and by early the 1900s, a recipe for the delicious treats appeared on containers of Quaker Oats.

In celebration of the cookie that has the "oats with the most", check out this delicious recipe from our Nutrition Coach, Michelle Mirizzi.

 

Classic Oatmeal Cookies 
Yield: 24 cookies (Double recipecookies freeze well!)

I like to start with a basic oatmeal cookie recipe and add ingredients that my family enjoys!  You can add a variety of ingredients to switch up the flavor, like chocolate chips, dried fruit, chia seeds, hemp seeds, or chopped nuts. 

Optional Add-Ins:

• 1/4 cup mini chocolate chips or butterscotch chips
• 1/4 cup dried cranberries or raisin
• 1/4 cup walnuts
• 1/4 cup hemp seeds or chia seeds

• 1/4 t. cinnamon or ground nutmeg

INGREDIENTS:  
• 1/2 cup unsalted butter at room temperature
•1/2 cup brown sugar
• 1/2 cup granulated sugar
• 1 egg
• 1 t. vanilla
• 1 1/4 cup old fashioned rolled oats
• 3/4 cup flour
• 1/4 t. salt
• 1/4 t. baking soda

PREPARATION:
  1. Preheat oven to 350 degrees F.  Prepare a large baking sheet with parchment paper.
  2. In a bowl, use an electric mixer, add butter, both sugars, egg and vanilla.  Whisk on high for 1 minute.
  3. Add oats, flour, salt and baking soda to the egg mixture in the bowl.
  4. Optional: fold in optional ingredients
  5. Using a medium sized scoop or a large spoon, scoop dough and evenly distribute on baking sheet, leaving about 3 inches of space between each ball of dough.
  6. Bake 10 -12 minutes, until edges are slightly brown.  Remove from oven and let cool on baking sheet to room temperature.
