
When you’re following a nutrition plan, it can be difficult to find a sweet treat that’s perfect for celebrating a special occasion, such as a birthday, anniversary, or Valentine’s Day. Well, our San Jose nutrition coaches are here to tell you that you can stick to your nutrition plan and eat your cake (or in this case, muffins) too!
Single Serving Chocolate Protein Muffins
This recipe only has 6 ingredients. It’s a great selection to make with friends, prepare for that special someone, or make on your own to show yourself a little love. It makes a single serving, so you can indulge wisely 😉
Ingredients
- 1 Scoop Protein Powder
- 2 Tablespoons Cocoa Powder
- 2 teaspoons of stevia or sugar substitute of choice
- 1 Whole Egg
- 1/4 teaspoon Vanilla Extract
- 2 Tablespoons Coconut Milk
Directions
- Preheat your oven to 350 degrees.
- Place all of your dry ingredients in a bowl and whisk together.
- In a separate bowl, mix your wet ingredients.
- Combine wet and dry ingredients together.
- Spoon prepared batter into a ramekin or individual muffin tin.
- Bake for 25 minutes.
Add Fruit to Complete Your Meal
This muffin recipe only contains protein and fat, so feel free to enjoy it alongside some high quality carbohydrates of your choice. Here’s what our coaches recommend:
- 1 cup fresh, sliced strawberries + 2 inches of bananas, sliced
- 1 cup of diced pineapples
- 1 small apple, chopped with ground cinnamon sprinkled on top
- 1 cup of fresh mango, chopped
