Here’s how to make them: Lemon Blueberry Protein Muffins Ingredients: 2 cups almond flour ½ cup vanilla protein powder (your favorite kind!) 1 tsp baking soda ½ tsp salt Zest of 1 lemon 3 eggs ¼ cup honey or maple syrup ⅓ cup unsweetened applesauce 1 tsp vanilla extract 1 cup fresh or frozen blueberries Directions: 1️⃣ Preheat oven to 350°F (175°C). 2️⃣ In a large bowl, whisk together the almond flour, protein powder, baking soda, salt, and lemon zest.
3️⃣ In another bowl, whisk the eggs, honey (or maple syrup), applesauce, and vanilla.
4️⃣ Combine the wet & dry ingredients, stirring until just mixed. Fold in the blueberries.
5️⃣ Divide the batter evenly into muffin cups and bake for 18-22 minutes, or until a toothpick comes out clean.
6️⃣ Let them cool slightly, then enjoy!
