I’ve got a GREAT recipe for you today… I love it because it has a comfort-food vibe and… it’s awesome for busy weeknights when you don’t want to think too hard about dinner.

Plus it actually fits into the guidelines for one of the healthiest diets in the world, the Mediterranean diet

One-Dish Chicken Sausage with Brussels Sprouts
(Serves 2 — double it for 4 meals)

  • 1 cup (270 grams) peeled and cubed sweet potatoes, roasted
  • 2 organic apple-flavored chicken sausages (like Aidell’s or Applegate)
  • 1 Tbsp olive oil, divided
  • 10 oz (285 grams) bag of shaved Brussels sprouts

Heat 1 tsp oil in a large skillet over medium heat. Dice sausages and cook until golden brown, 4-5 minutes. Remove and set aside.

Heat the remaining oil. Add Brussels sprouts and cook, stirring, 4-5 minutes until caramelized. 

Add sweet potatoes and sausage; stir to combine. Season with salt and pepper, if desired.

Calories per serving: 343; Fat: 11g; Carbs: 43g; Fiber: 9g; Protein: 18g.
