Let’s talk about one of my favorite secret weapons for busy Los Gatos locals who want healthy dinners without spending an hour in the kitchen: breakfast for dinner. But there’s a trick if you want to do it right… And that’s to skip the sugary stuff and build a BALANCED plate :-) Here’s one of our Los Gatos nutrition coach’s favorite go-to “Breakfast for Dinner” recipes: Savory Veggie Egg Scramble Bowl (Serves 2) 1 tsp olive oil ¼ cup diced onion or bell pepper 1 cup (30 g) chopped spinach or kale ½ cup (75 g) cherry tomatoes, halved 4 eggs (or 2 eggs + ½ cup/120 g egg whites) Salt, pepper, and your favorite herbs to taste Optional: 2 Tbsp feta or goat cheese Optional: sliced avocado for topping Heat the olive oil in a skillet over medium heat. Add onions and peppers, and cook until slightly softened. Toss in spinach and tomatoes, cooking just until wilted. Whisk eggs, season with salt and pepper, and pour into the pan. Stir gently until just set. Sprinkle with cheese and top with avocado if you like. Serving ideas: Pair it with sprouted-grain toast or roasted sweet potatoes. Add hot sauce, salsa, or everything bagel seasoning. If you’re craving something sweet, finish with Greek yogurt and berries for dessert. Nutrition (per serving, without avocado or toast): Calories, 255; Fat, 16 g; Carbohydrates, 7 g; Fiber 2 g; Protein, 20 g. We hope you like this as much as we do!
